Savor the Succulent Fruits of Summer: Strawberries

Nothing says Summer like picking fresh produce from a garden––preferably your own. I look forward each Spring to the preparation of my garden beds and containers for the treasures I know they’ll produce. Containers and raised bed suit my gardening style since I don’t enjoy battling the poor soil in my yard. I strive to garden smarter, not harder!

There’s no better way to begin my day, than finding a few juicy jewels hanging on my strawberry plant. Words just don’t describe the sweet flavor of fresh berries! Besides their beauty and delectable flavor, strawberries pack a powerful punch of nutrition.

Did you know:

  • Wild strawberries were consumed in ancient Roman times and used for a variety of medicinal concerns such as relieving inflammation, fever, kidney stones, gout and bad breath.

  • Strawberries are a rich source of Vitamin C, potassium, folic acid and fiber, which strengthen the immune system.

  • One cup of fresh strawberries contains nearly 160% of the daily requirement of Vitamin C

  • Strawberries support cardiovascular health.

  • The antioxidants in strawberries may help to prevent cataracts.

  • Ellagic acid in strawberries prevents collagen destruction and inflammation––great for maintaining beautiful skin.


The list goes on, but who cares when this delicious little gem tastes so good? When picked fresh, the natural sweetness satisfies even the meanest sugar monster, without adding extra calories. Strawberries make an easy addition to a morning fruit smoothie. Their natural sweetness tames the tartness of Summer rhubarb recipes. Sliced into a pitcher of purified water, they add a visual, flavorand nutritional delight. Sliced strawberries bring life to a Summer spinach salad. I encourage you to grow your own––strawberries may be one of the easiest plants to grow, and they add a splash of color to your patio or deck. The huge, thicker skinned, less sweet hybrids dominate the market, and a small strawberry container with the real berries will delight your taste buds while boosting your health!

Fruity Avocado Salsa

Serves 2-4

1 medium avocado, slightly firm, peeled, pitted and diced

1 medium mango, peeled, pitted and diced

3-4 large strawberries (about 1cup), hulled and diced

1/4 red onion, diced

1/4 cup fresh cilantro, finely chopped

1 teaspoon jalapeño, finely chopped *if you like “hot” increase to 1-Tablespoon

Juice of 1/2 of a lime

Sea salt to taste

• Combine in medium mixing bowl: avocado, mango, strawberries, onion, cilantro, onion and lime juice.

• Season with salt to taste

• Serve with tortilla chips or chicken or fish or pork; Salsa is best served soon after it is made
